Lay the pineapple on its side and cut off the crown and about 1cm off the base (see photos)Stand the pineapple up, support the top with one hand and begin to cut away the prickly skin with a sharp knife. Cut from top to bottom moving around the fruit until all the skin has been removed (see photo)Turn the skinned pineapple onto its side and begin to slice it. Line a round 20cm cake tin with greaseproof paper.Spread the chopped pineapple across the base of the tin.Place the margarine and sugar into a large mixing bowl.*Beat the ingredients together until smooth.*Add the eggs and vanilla essence and mix well.*Gradually add the flour and mix until evenly distributed.*Pour the cake mixture into the tin and place in the oven, gas mark 4/ 180° for 20 minutes.When the cake is golden brown and a knife passes cleanly through the centre of the cake, remove the cake from the oven and place it on a cooling rack to cool.
