Spray a 9 X 13 inch baking pan or casserole dish with vegetable spray. Stoneware dishes work great for this dessert too.In a large bowl, mix apple slices, cranberries, maple syrup, 1/4 cup whole wheat pastry flour and 1 Tablespoon cinnamon together. Spread in prepared pan, and set aside.Combine rolled oats, date or brown sugar, 3/4 cup whole wheat pastry flour and 1 teaspoon sugar in a large bowl. Using a pastry blender or two knives, cut in cold butter until mixture is crumbly, or it resembles very small peas. This step can also be done in a food processor. Spread evenly over fruit.Bake at 350 degrees for 45-55 minutes, or until fruit is bubbly and crisp topping is lightly browned.Let cool slightly before serving. Do not eat right out of the oven.
